CREVE COEUR, Mo. – Egg prices are continuing to soar, causing some businesses to adjust their prices while others are eating the cost.
“We roughly go through about 1,500 eggs a week,” co-owner of La Bonne Bouchée Patisserie & Cafe Brian Shannon said.
It takes three shipments of eggs each week to keep up with demand, according to Shannon.
“We went through 10 gallons of eggs just this past weekend just on omelets alone. So with the egg prices increasing, it is concerning for us,” he added.
The U.S. Bureau of Labor said the national average price for a dozen grade A large eggs in December was $4.15, up more than $1.60 from December 2023.
The bakery is paying almost double the price of eggs compared to six months ago.
“This past summer we were paying like $67 for a case of eggs, and there are 180 eggs in a case, and now they’re anywhere from $106 to $130 for a case of eggs,” Shannon said.
While they haven’t raised the price for customers so far, they’re keeping a close watch.
“We’re going to monitor for another 30 days and make a decision after 30 days. But at this point, we’re staying right where we are with our pricing, and we’re not trying to raise prices and use it as an excuse. We’re just riding this thing out and hoping they’ll come back down,” he said.
January and February are typically slower months for La Bonne Bouchée Patisserie & Cafe, which means they’ll use more eggs in the coming months. As they are adding crepes to the menu, it will mean using even more eggs in the future.
